SOP — Mash Additions¶
FUERST WIACEK Version 1.2 | Brewhouse — brew day | Frequency: per brew
Purpose¶
This SOP covers the preparation and addition of mash salts (Maischesalze) into the mash dosing device. Salts are dosed automatically into the mash by the Botec recipe — your job is to prepare and load them correctly before mashing begins.
PPE Required¶
- Gloves (especially when handling CaCl₂)
- Safety goggles
Risks¶
| Hazard | Risk |
|---|---|
| CaCl₂ (calcium chloride) | Highly corrosive to stainless steel — rinse all contact surfaces immediately and thoroughly |
| Splashing | Salt solution can splash when added — add carefully |
Equipment¶
- Printed recipe
- 5 L pitcher with a handle ("Kanne")
- Mash dosing device (attached to mash tun)
Timing¶
Mash additions must be prepared before mashing in. At the latest, begin preparation when malt is milling or when malt loading is complete.
Process¶
1. Prep Salts¶
- Pull all mash salts as specified in the recipe.
- Weigh or measure each salt accurately.
2. Mix Solution¶
- Add all salts to the 5 L pitcher (Kanne).
- Add water and mix thoroughly until fully dissolved.
3. Add to Dosing Device¶
- Close the water valve on the dosing device first.
- Open the dosing device lid.
- Add the salt solution carefully — avoid splashing.
Warning
If you are using CaCl₂ (calcium chloride), rinse down all contact surfaces immediately and thoroughly with a large amount of water after adding. CaCl₂ is corrosive to stainless steel. Keep water away from any sensors and their lines.
- Close the device lid securely.
- Open the water valve again — it should face towards you, as shown in the image above.
4. Log and Sign Off¶
- Mark the mash additions as done on the printed recipe.
- Tick off the task on your todo list.
Note
The mash salts are injected into the mash automatically by the Botec recipe — no manual intervention is needed once the device is loaded.
