This section covers SOPs that are not tied to a single zone — they are used by Brewhouse, Cellar, and Packaging alike. If you are swapping a barrel, dosing a bath, running an up-concentration, or doing the annual HLT clean, you are here.
SOPs¶

| Chemical Baths — Caustic & Peracetic | Anyone with fittings, gaskets, or small parts to clean and sanitise | Daily / refreshed weekly |
| CIP Up-Concentration | Tank 1 (Brewhouse + Wortway CIP) and Tank 2 (Canning + Cellar) — runs before any CIP that uses up-concentrated caustic | Once per CIP cycle |
| HLT CIP | Hot Liquor Tank — supplies hot water across brewhouse, cellar, packaging | Annual (was weekly previously) |
| Steam Generator | Steam system — weekly start, daily check, and periodic maintenance | Weekly (manual start) |
| Pump Motor Electrical Diagnostics | Measuring motor winding resistance (star/delta) to diagnose electrical faults — call Lukasz first | When a pump fails or runs abnormally |
