Spreadsheets

FUERST WIACEK Production, fermentation, and maintenance spreadsheets — purpose, fields, and links

The brewery uses a small number of shared Google Sheets to log production data. SOPs reference these by name (e.g., "log in the fermentation spreadsheet") — this page is the single source of links and structure.

Note

All sheets are restricted to the brewery team. If you cannot open a link, ask Lukasz for access.

Main Production Spreadsheet

One Google Sheets document, multiple tabs. Used for planning the production week and logging brews and packaging.

Tab Purpose Link
Production Plan Forward-looking weekly schedule — brews, packaging slots, tank assignments open
Brewing Log One row per brew — batch code, recipe, samples, knockout values, pitch data open
Packaging Log Per packaging run — beer, format, fill data, foam-down, CIP record open

Brewing Log — Field Reference

One row per brew. Filled in as data becomes available across the brew, knockout, and pre-pitch checks.

Column Data When
Batch Code From brew sheet Before brew
Brew Date Date of brew Day of brew
Botec Brew Recipe ID Before brew
Name Recipe name Before brew
OG (P) / ABV Recipe targets Before brew
Tank CIP — Done / GT / OP1 / OP2 Who ran the tank CIP, which operators After tank CIP
WW CIP — OP1 / OP2 Who ran wortway CIP After wortway CIP
WW Sani — Done / OP1 / OP2 Who ran wortway sanitisation After wortway sanitisation
Yeast Brink CIP — Done / OP1 / OP2 Who ran brink CIP After brink CIP
VZ (P) First wort Plato First wort sample
VZ (pH) First wort pH First wort sample
Kettle Full (P) Beginning of boil Plato Boil start sample
Kettle Full (pH) Beginning of boil pH Boil start sample
Knockout (P) Knockout Plato During knockout
Knockout (pH) Knockout pH During knockout
Knockout (hl) Volume to tank During knockout
O2 Flowrate (L/min) Oxygen dosing rate During knockout
Yeast Yeast strain code Before/during knockout
Pitch Rate Calculated pitch rate During knockout
Yeast Source Brink reference During knockout
Viability (%) From cell count Before knockout
Yeast kg Weight pitched During knockout
Cell Count ×10⁹ From cell count SOP Before knockout
Notes Anything unusual Any point

Note

V1 (night brew): VZ and Kettle Full samples are not taken by the brewer — the brew is past those stages when they arrive at 7 AM. Leave blank or note as night brew.

Fermentation Spreadsheet

Separate Google Sheets document. One tab per tank. Updated daily during fermentation and at each decision point.

Open the fermentation spreadsheet →

Type of entry Logged SOP
Daily readings Plato, pH, temperature, spund, pressure Fermentation Monitoring
VDK result Pass / Fail with date and evaluators VDK Check
Cone dumps Type (trub / yeast / hops), date, volume in litres or buckets × 30 L Cone Dumping
Dry hop Date, hop addition completed Dry Hopping
Carbonation Bubbling start time, duration; CO₂ reading after equilibration; adjustments Carbonation
Yeast harvest Volume harvested, sample taken at ~50% fill Yeast Harvest
Tank CIP ATP RLU result + initials Fermentation Tank CIP
Recipe step changes Any manual advance in the Botec recipe — soft crash, dry hop, ready for filling Fermentation Management

Yeast Calculation Spreadsheet

Separate document. Used for cell count entries and pitch volume calculations.

Open the yeast calculation spreadsheet →

Reference: Yeast Cell Count & Viability.

Steam Generator Control Sheet

Separate document. Records of steam generator readings and adjustments.

Open the steam generator control sheet →

Maintenance Logs

Instrument calibrations, services, and incidents are logged separately so the data persists per instrument across all batches.

Log What gets recorded SOP
Anton Paar maintenance log Calibration date, result, notes, initials Anton Paar DMA 35 Maintenance
Hanna HALO2 maintenance log Calibration result with both buffer values, electrode service notes Hanna HALO2 Maintenance
Haffmans service log Mucasol storage refresh, plunger / sensor service Haffmans SOP
HLT CIP record Date of last clean (annual) HLT CIP

Note

Maintenance log links — TBD. Currently captured in the production schedule document or per-instrument paper logs. Ask Lukasz for the canonical location.

Stock Monitoring

Chemical stock levels are tracked informally — the rule is to inform Lukasz and the team when down to 1 full unopened unit of any product. See Chemical Management.
